Akkawi cheese

is the versatile mozzarella of the Middle East. It is a universal snack that goes well with any meal during the day. It is used not only in main courses but in oriental deserts such as konafa, but mostly it is enjoyed as a simple table cheese, usually paired with fruit.


To get rid of the excess saltiness, we reccomend to slice the it into 1 cm slices and soak the slices in water for at least an hour before eating.
