Smoked Akkawi cheese, vacuum packed, 400 g and 200 g

Smoked semi-soft unripened salted cheese Akkawi in brine 40% fat content in dry matter.

Ingredients: pasteurized cow’s milk, food grade salt, hardener - calcium chloride, starter culture of lactic acid bacteria, microbial enzyme, natural color (E141, E524).

 

Shape: unregularly rectangle with rounded side surfaces and edges

Size  for 400 g: width 10 - 12 cm; height 2 - 5 cm; length 10 - 12 cm

Size for 200 g: width 5 - 6 cm; height 2 - 5 cm; length 10 - 12 cm

Appearance: uneven clean surface, smoke grid marks are allowed

Taste and smell: very mild, lactic, salty, with smoky taste and smell

Consistency: smooth, slightly crumbly, semi-soft

Sectional appearance: homogenous, without holes

Colour: the surface of the cheese is light brown to brown
